Dry substances are extracted from the oak of the barrel by the alcohol of the eau-de-vie. This essentially gives cognac its colour. The age and type of oak that is used influences this proces, as is the degree of toasting of the barrels.
Also some substances can be added to change the colour even further. Usually caramel is used to this end but also boise that is added can darken the colour.
