Reduction of the alcohol percentage in cognac is done by adding water. But it is a delicate process. When it is done to fast, the cognac gets soapy. For this reason many cellar masters do not use pure water, but cognac diluted with water, sometimes rather old cognacs even. These weakened cognacs are called petites eaux or faibles which translates to small waters and weak (plur.).
