There are five: grande champagne, petite champagne, borderies, fins bois and bons bois. Bois ordinaires does not have its own aoc. The cognacs of this Cru are not allowed to use the sous-appellation ‘Appellation Bois Ordinaires Controlée’. Of course they still can use the general appellation of the cognac region: ‘Appellation Cognac Controlée’.
To make things a little more complicated, there is in fact a sixth appellation: appellation fine champagne controlée. This however is not a cru of its own, but when a cognac is made of at least 50% grande champagne cognac and the rest of only petite champagne, it is allowed to be called ‘Appellation Fine Champagne Controlée’.
